"Kanji" is a popular drink from Punjab and also made-down in Northern India.

 

 


"Kanji" is a fermented drink. It's made with black carrots and spices that is  Red chilli powder, kosher salt, asafoetida and mustard powder. This drink is usually prepared in winter season because black carrots only accessable during winter.

 

 

Gajar ki kanji is healthful as per follow.

1)Provide anti-inflammatory benefits regularly. Anti-inflammatory foods such as kaali gajar can help combat inflammation in the body and thus, prevent the risk of several diseases and illnesses. A diet rich in antioxidants is also known to keep your brain active and your gut healthy.

 3) Full of nutrient They are low in calories and rich in dietary fiber, vitamin K, vitamin C, potassium, and manganese. They are also good sources of carotenoids that boost eye and skin health. It is important to load up on Vitamin C rich foods during the winter season as it helps in boosting your immunity and protects you against bouts of cold and flu.

4) Good for your eyes Anthocyanin-rich foods such as kaali gajar may help improve your eye health. Anthocyanins can benefit your vision in many ways - they enhance your vision, improve circulation and also help in fighting macular degeneration.

5) Aids digestion The fermented Kaanji drink that is made using kaali gajar and mustard seeds is known to boost your digestion during the winter season which tends to become a bit sluggish. Kaali gajar is also full of fiber which helps in regulating digestion. Most of the fiber found in kaali gajar is soluble which absorbs water in the digestive tract and turns into a gel-like substance. This keep you full for longer and can also help lower blood cholesterol and stabilize blood sugar levels. .Purple carrots are slightly sweet but they lose a lot of their colour and flavour when boiled. Therefore, they are best eaten raw.

 

 Serve this drink before dinner for better digestive system. It has a tangy flavour that excite the taste bud and it hardly take 15 mins to prepare.

Ingredients:

 

1/2 kg  black carrot

 

1/4 tsp asafoetida

 

1 tbsp red chilli powder

 

1 tbsp kosher salt

 

3 tbsp mustard seeds

 

3 litre water

 

 

Method:

 

Step 1- To prepare this healthy drink, first wash the carrots nicely and cut them into small sticks.

 

 

Step 2- Boil the carrots in water and then add rock salt, red chili powder, mustard powder and the asafoetida and mix. Let the mixture cool down for a while.

 

 

Step 3- When the mixture has cooled down, transfer it to a sterilized jar and close the lid very tightly. Place the jar under the sunlight and let it ferment. 

 

(Note: If there isn’t enough sunlight, place the jar in a warm place.)

 

 

Step 4- Let it ferment under sunlight for a week. The fermentation process can take from 2-3 days to 6-7 days, depending on the weather of the area.
